if you uninstall apps, the datas within are deleted. Some apps may store the data via your google account so not everything is lost. You can find uninstalled apps like this:
Open the Google Play Store
Open the menu top left (the three lines)
Tap on My apps & games
Choose the tab Library
There you will find every app you uninstalled ever connected to your Google account.
